2. On the sixth day, take no dinner.
3. At 6 PM, take a teaspoon of Epsom salt (magnesium sulphate) with a glass of warm water.
4. At 8 PM, repeat the same. Magnesium sulphate opens the gallbladder ducts.
5. At 10 PM, take half cup olive oil (or sesame oil) with half cup fresh lemon juice. Mix it well and drink it. The oil lubricates the stones to ease their passage.
The next morning, you will find green stones in your stools. "Usually they float," Chiu Nan notes. "You might want to count them. I have had people who passes 40, 50 or up to 100 stones. Very many."
"Even if you don't have any symptoms of gallstones, you still might have some. It's always good to give your gall bladder a clean-up now and then.

I am lucky enough to say that my boys love to eat kale. There was actually a kale incident the other night whereby I only made one bunch and some grabbing occurred at the table as the boys “fought” over it. Ok, sorry to brag, however this is what sometimes happens in my house. Because kale is a hot commodity and because I don’t get to the grocery store on a daily basis (who does?), I try to keep kale on hand at all times to avoid said conflict. Here is how I store my kale so that we can have our McKale on a daily basis –that is when we’re not eating broccoli –I know, I know, it’s not nice to be boastful –I apologize!

How To Prepare Kale

Ingredients
1 bunch kale

Instructions

1 Fill a large deep bowl with water
2 Take the rubber band or twist-tie off the bunch of kale
3 Submerge the leaves of kale in water, swishing them around gently to remove any dirt
4 Allow kale to soak for a few minutes and swish again
5 Pour water out of the bowl and rinse kale under fresh water
6 Spread some cloth towels out on a counter or your kitchen table
7 Place the kale on the towels and allow to dry for about an hour while you do something else
8 Come back to kitchen and chop kale into 1-2 inch wide strips on a cutting board with a sharp knife
9 Discard the very bottom of the stems; do not remove the ribs, they are delicious and crunchy and  besides we don't want to waste food
10 Place chopped kale in a cloth or paper towel
11 Fit into a Ziploc bag, squeeze the air out and zip closed
12 Write the date on a small piece of tape (dog ear your tape for extra easy removal)
13 Place kale in the fridge
14 Keeps for up to 5 days

We all know that fresh vegetables are the best in terms of taste and nutrition.  And we know that cutting into anything (think of an apple that begins to brown) decreases the life force and freshness of that living thing.  However, these are the times (baseball season) that call for creativity and shortcuts.
What I love about this little storage trick is that on a busy night I can come home, put a steamer basket and pot with an inch of water on the stove and have kale ready to serve in 5 minutes.  With 2 children on 3 different baseball teams this year, I’ll need as many shortcuts as I can get.

Serve your kale with gomasio or try this “fancy” dish.  Sometimes my boys like to add [ume plum vinegar] and [toasted sesame oil] to their steamed kale, though my favorite way to eat it is raw. By the way, my 10 year old son was the “hand model” for this shoot and looked forward to it for days –I love how confidently he holds that sharp knife and chops.  The boys have had their own knives (smaller, duller versions to begin with) since they were about 4 years old. And they learned young how to make kale an easy, ready to go dish for those busy nights!

Feds Taking Kombucha Off Shelves?

No, we’re not kidding. Help us stop this unwarranted attack. Action Alert!

The Alcohol and Tobacco Tax and Trade Bureau, a division of the US Treasury Department, recently sent letters to several producers of kombucha, warning them that since their beverages supposedly exceeded the allowable alcohol limit, they must be labeled as alcoholic beverages and be subject to alcohol regulation or face hefty fines and legal action.

Kombucha is a fermented tea drink brewed with yeast and bacteria. The drink contains trace amounts of alcohol, but it typically falls below the federal limit of 0.5% alcohol by volume.

Why is this happening? Is there a safety concern? Not in the least. On the contrary, kombucha appears to be very good for you. It seems unlikely that the government would go after kombucha without prodding from some special interest. Has the soft drink industry detected a threat from a rapidly growing market and decided to use the power of the federal government to eliminate competition? There doesn’t seem to be another explanation.

The facts of the case reveal just how outrageous this investigation is—further suggesting that crony interests may be pulling the strings. The government is using the same alcohol test for kombucha that it uses for wine, beer, and spirits. But the organic acids and natural sedimentation in kombucha can be read as ethanol, which throws off the results of the test.

Rep. Jared Polis (D-CO) sent a letter to the Alcohol and Tobacco Tax and Trade Bureau explaining that their testing methodology is flawed. Polis asked them to stop their harassment of the kombucha brewers until a unique testing method can be devised that is appropriate to the specific chemistry of the beverage.

Polis notes in his letter that the alcohol level can sometimes rise slightly above the federal limit, but only if the kombucha is incorrectly stored at warmer temperatures, which also spoils the drink. Polis wrote, “Eight spoiled kombuchas are roughly equivalent to one beer, but that doesn’t mean we should regulate it like we do alcohol—it makes absolutely no sense.”

Polis in past years also introduced a bill to allow food and supplement producers to tell their customers about good peer-reviewed, university research on the health aspects of their products. And he has supported the sale of raw milk. If only we had more members of Congress like him!

Unpasteurized kombucha contains the “good” bacteria that promote gut health and boost immunity. But if kombucha is regulated like alcohol, many supermarkets and convenience stores won’t be able to sell it, and it is unlikely that health-conscious consumers would travel to liquor stores to stock up on the drink.

Liquor is also very heavily regulated—by states as well as the federal government. Out-of-state shipping may be barred, and prices may be fixed by regulation. The probiotic benefits of kombucha would also be denied to anyone under 21. The combination of these factors would likely lead today’s producers to decide that it’s no longer profitable to make kombucha, thus restricting—possibly eliminating—consumer access to it. Or, just as likely, Big Food (especially soda) companies would simply take over the market.

TYPES OF MARGARINE AND BUTTER (DON’T BE CONFUSED!)

Traditional stick margarine: It’s the least healthy of all margarines because it’s highest in trans fat. The more solid a margarine, the more trans fats it contains from partially hydrogenated oils. Best uses? The same as butter — spreading, melting, baking and sautéing.

Regular tub margarines/spreads: Most contain 61 to 79 percent vegetable oil and many are now labeled as trans-fat-free, though they may still contain some partially hydrogenated oil. Gimmicky ingredients like sweet cream buttermilk, yogurt and olive oil aren’t typically present in large enough quantities to be of much help, except for some flavor. Several tub margarines now have added calcium — at 100 milligrams per tablespoon, which is 10 percent of the Daily Value recommendation — might be a helpful calcium boost. Best uses? Spreading, melting, sautéing. Avoid use in baking, as it reduces volume of baked product, so cakes and cookies rise less and have a tougher crumb.

Light, low-Fat and fat-free spreads: These range from 0 percent (fat-free/nonfat) to 40 percent vegetable oil (light/lower fat) and are your most healthy choices. Each of these products contains a large quantity of water, which greatly affects potential use. Best uses? Spreading, though the water content can cause sogginess if given time. Do not use for baking, it results in poor quality products (e.g., individual cookies become a bar cookie, cakes will be dense and have compressed crumb).

Plant stanol and sterol ester spreads: These spreads include plant sterols and stanols that are proven to lower blood cholesterol — if you use 2 to 3 tablespoons daily, which can quickly add calories to your diet. Brand name examples are: Benecol, Promise or Smart Balance. Best uses? Spreading. Don’t use for baking for same reason as light spreads.

Spray/pump products: These are extremely low in saturated and trans fats, hence their liquid nature. Best uses? Topping and sautéing.

Unsalted butter: Sometimes called “sweet cream butter,” this is the most versatile variety. It will see you through every cooking job, from baking to sautéing. Made from only milk or cream (or sometimes both), it contains at least 80 percent milk fat—the fatty particles in milk that are separated out to make cream.


Salted butter: Just like the original, but with (surprise) the addition of salt. Many people reach for this when buttering bread, but use caution when you’re cooking or baking, since most recipes call for unsalted butter.
Organic butter: Comes from cattle raised without antibiotics or growth hormones and given 100 percent organic feed grown without toxic pesticides or synthetic fertilizers. It is available unsalted and salted and can be used like conventional butter.

Whipped butter: This variety has air or some other gas, such as nitrogen, added to it to make it less dense than standard butter, so a little goes a long way. The increased volume results in fewer calories per tablespoon (often half) and a lighter texture. Best for spreading on toast and finishing dishes, whipped butter is not recommended for baking or cooking.

European-style butter: This is the reason French croissants are so utterly irresistible: Loaded with extra milk fat—82 to 85 percent for most brands—European-style butter has less moisture than standard butter and so produces extra-flaky pastries and tender, fluffy cakes. Because it is made with fermented (also called “cultured”) cream, it has a slight tang. European-style butter can be used for all cooking tasks.

Spreadable butter: A combination of regular butter and vegetable oil (and sometimes other flavorings and fillers), this product maintains a soft texture even when refrigerated. It is not recommended for baking or cooking.

Light butter: This option has half the calories of standard butter because it contains less milk fat—40 percent at most. The rest is made up of water, lactic acid, and other fillers. It is not recommended for baking or cooking.

Butterlike spread: Often marked with the label “buttery spread,” this has a similar soft texture to spreadable butter but contains far less real butter—at most 5 percent and sometimes none at all. Instead, it is made primarily from a blend of vegetable oils and other fillers. Its benefits include fewer calories, less fat, and just a trace amount of cholesterol. It is not recommended for baking or cooking.

Scientists in Sugar Shock After Finding Sucrose Doesn't Melt



Researchers and confectioners alike have known for years about sugar's finicky melting point, but have always attributed it to either impurities or their equipment. University of Illinois scientists, however, have discovered that the real reason is because sugar doesn't melt, it decomposes.

When a material, like say ice, melts, it does so at a consistent and repeatable temperature, and the process can be reversed— aka freezing. The melting point of sugar, however, depends on how hot the fire melting it is, known as heating-rate dependence. Also, the sugar can't be un-melted; its molecular structure is changed in a way that can't be reversed.

"We saw different results depending on how quickly we heated the sucrose. That led us to believe that molecules were beginning to break down as part of a kinetic process," Shelly J. Schmidt, a University of Illinois professor of food chemistry, told ACES News. She and her team used high-performance liquid chromatography to observe the sucrose both before and after melting and confirmed the presence of sucrose decomposition components as soon as the melting process began.

Because the rate of "Apparent Melting," as the process is now called, is dependent on the rate of heating, much like milk pasteurization, it could prove a boon for numerous food and pharmaceutical industries.

"Certain flavor compounds give you a nice caramel flavor, whereas others give you a burnt or bitter taste. Food scientists will now be able to make more of the desirable flavors because they won't have to heat to a 'melting' temperature but can instead hold sugar over a low temperature for a longer period of time," said Schmidt, "This discovery is important to food scientists and candy lovers because it will give them yummier caramel flavors and more tantalizing textures. The term surimi refers to concentrated myofibrillar protein extracted from fish flesh by washing minced meat that has been separated from bones, skin, and guts. After deboning of the fish, the sequence processes of making surimi involve mincing, washing and dewatering, refining, screw pressing, addition of cryoprotectant, and freezing (Park and Lin, 2005).

Some of the machines in surimi production:

• MEAT SEPARATOR. Fish meat separation achieved regardless to the species of fish (small fish to large fish).

To prevent deterioration and denaturation of myofibrillar protein, proper post harvest handling is crucial. Freezing is often used to preserve fish during the time if it is required for travel between the catch site and the surimi manufacturing plant. Benjakul et al. (2004) studied the effect of frozen storage (–18 oC) on the gel-forming ability of four fish species (threadfin bream (Nemipterus spp.), purple-spotted bigeye (Priacanthus tayenus), lizardfish (Saurida spp.), and croaker (Pennahai macrophthalmus)) that are commonly used for surimi production in Thailand. They found that the difference in gel-forming ability depended on species and storage time. Threadfin bream was considered better against denaturation since it has lower formaldehyde content produced by extended frozen storage

Turn off the oven and leave the mixture to stand for about 20 minutes, and then again re-heat the oil again and repeat the process. Then strain the oil through a thick gauze and leave it aside. Heat the wax in a pan until it is completely dissolved, then add oil to it and mix well. Pour the resulting grease in a jar and leave it to cool and harden.

To use:

Use fat when you feel pain in muscles and joints, regardless of the cause of the pain. Avoid application of this balm on open wounds, because it will cause pain. After you apply the ointment on the sore, wash your hands well and be careful not to touch your eyes.
